Shashlyks or kebabs are a simple grilled entree that consists of alternating seasoned meat and vegetables on a skewer.
The kebab originated in Persia, where the traditional meat was lamb. Today, kebabs are seen with chicken, beef, goat and fishes. A variety of spice rubs and marinades add distinct flavors to the kebab. Azerbaijan has a rich variety of shashlyks, one of the most traditional of which is made with potatoes and sheep fat.
